My boys absolutely love pancakes! I make this recipe most saturday mornings. This recipe makes a big batch, so we have leftovers for the whole week! Before school I toast them and the boys will have a nice warm pancake to go with their yogurt or eggs. I cook with two pans on the stove to move the process along faster.
2 cups whole wheat flour
2 cups white unbleached flour
8 teaspoons baking powder
2 rounded teaspoons salt (my husband likes them salty)
3 cups whole milk (you may need a touch more to thin out batter to desired consistency)
1/2 cup vegetable oil
Mix well and enjoy!
