Mikey's Blueberry Muffins

If you ever had the pleasure of having a conversation with my son Michael, you know he is very determined, and stubborn. One afternoon this past week he decided that I was going to take him to the local grocery store to buy him a muffin! I had already been there many times this past week so I didn't want to make a special trip, nor do I ever indulge in his demands. So I suggested that we could use our fresh blueberries at home, and we could make our own muffins. Mikey being my best helper in the kitchen, quickly agreed. He helped every step of the way and was very satisfied with the results. If you are looking for a quick and easy home baked muffin, we persuade you to give these a try. 

Ingredients:
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup unbleached flour
1 cup whole wheat flour
1/2 cup butter at room temperature 
2 large eggs
1 teaspoon vanilla 
1/2 cup whole milk
1 small package of fresh blueberries, or more if you like

For the Topping: 
1 tablespoon Raw Sugar
1/8 teaspoon ground nutmeg

Preheat oven to 375
Use cupcake liners to skip the grease pan step
In a bowl combine all dry ingredients. 
Add eggs and vanilla
fold in blueberries at the end
Spoon into muffin cups (makes 12 muffins)
Sprinkle sugar mixture on top of the uncooked muffins
Bake at 375 for 20-24 minutes, until golden brown or toothpick comes out clean.
